We’re at that point in the summer where it’s too hot to eat. That’s when I break out my egg salad sandwich recipe!


I love Egg Salad Sandwiches. They’re quick and easy to make but oh so yummy. It’s my go to in the summer when I don’t want to heat up the house.


Egg salad is one of those recipes that can be made a lot of different ways. I like mine without relishes and onions but I know a lot of people who love adding their own flourish. The recipe below is a basic old fashioned egg salad sandwich recipe. From this recipe you can doctor your egg salad to your taste.


Let’s get started!


Basic Egg Salad Sandwich Recipe

If you want to make Egg Salad you’re of course going to need some eggs. I know that’s obvious but you’ll want to make sure you hard boil your eggs. I use my Crockpot pressure cooker to make mine because they come out perfect every time. No more of those green circles around the yoke. I bought the Crockpot brand because it was $40 cheaper than an Instapot and Crockpot is a brand I trust.


If you don’t use a pressure cooker for your eggs you’ll need to boil them. Here’s a guideline for perfect hard cooked eggs.


Cook up half a dozen (6) eggs. Once the eggs are cooked you want to cool and peel them.

I use an egg slicer to cut my eggs. It makes quick work of chopping the eggs. First I cut the eggs in one direction.

Then I turn the eggs and slice it the other direction.

As you can see above this makes perfect little chunks for your egg salad sandwich. That’s why I like to use the egg slicer. I could never chop and egg this fine. Well maybe I could but I don’t have the patience to do it.


Gather Your Ingredients

You will need some mustard. For the basic, old fashion eggs salad recipe we’re going to add yellow mustard.


This is one of the places people like to get fancy. I’ve had sandwiches with stone ground mustard, honey mustard, and horseradish mustard. All were good in their own way. You can experiment with mustard flavors if you want but I’m going with plain yellow mustard.

Next grab some Miracle Whip. Yes, you can use mayonnaise. My family will only eat Miracle Whip because my husband has some childhood trauma that says he won’t eat mayonnaise. But that’s a story for another day.


Then you want to get this fancy kitchen tool out.

Yep, that’s a tablespoon. A real tablespoon. Like the kind you would eat soup with, not the little teaspoon.

I don’t use precise measurements. For 6 eggs I use 2 heaping spoons full of miracle whip.

And then two spoons full of mustard.


One caveat, I have family members who like less mustard and more Miracle Whip in theirs. You will be able to adjust to your taste, but for a basic recipe it’s equal parts.


Okay I lied two caveats, if you like a drier egg salad you can add 1 tablespoon of each. Again, that’s personal preference. Everyone is different in taste, but some people will be really upset because in their minds there’s only one way to make egg salad sandwiches and it’s their way.


You and I both know there are hundreds of variations, so we’re less triggered when others share their style. We’re just awesome that way. High five!

It’s time to mix it! I probably should have used a larger bowl but I didn’t. You want to combine everything really well so give it a good stir.

This is what it will look like once it’s all mixed up. The whole thing is yellow and creamy. I’m getting hungry just looking at that picture.


Eggs Salad Sandwich Serving Suggestion

I like serving my eggs salad on a croissant with fresh lettuce. A side of chips and fruit is all you need on a super hot day.


My other go to bread for egg salad sandwiches is 12 grain bread, but if you like white bread, or pita bread, or rye bread, then you do you. Either way if you like the flavors then I’m sure you’ll like it with your egg salad.

Ingredients

  • 6 eggs
  • 2 tbsp Yellow mustard (use a mustard you like)
  • 2 tbsp Miracle Whip (or Mayonnaise)

hard cook, cool, and peel 6 eggs
chop the eggs
mix mustard and Miracle whip into the chopped eggs

    I have the same trauma that your husband has and there are a lot of us out there. He is right when you said he has to have only miracle whip.
