The cookie butter Rice Krispie bars are literally the best Rice Krispie bars I have ever made. Wait, scratch that. They are the best Rice Krispie bars I have ever eaten! They are super easy and quick to make so that is definitely a bonus. I love the cookie butter from Trader Joe’s, but unfortunately I do not have a Trader Joe’s near me. So instead, I use Lotus Biscoff cookie butter and it is still delicious! You can find it in the peanut butter aisle of most grocery stores. My boyfriend had one for breakfast (yes, breakfast) this morning and then took some for his employees. They could not figure out what was in them that made them so delicious, but that is the magical cookie butter. So good. You need to make them.

For the bars:
  • 6 Tbsp butter 
  • 12 oz bag marshmallows 
  • 1 tsp vanilla extract
  • 1 cup cookie butter 
  • 6 cups Rice Krispies
For the drizzle:
  • 1/4 cup cookie butter, melted
  • 1 Tbsp powdered sugar, sifted
  • 2 Tbsp milk 
  • 1/2 tsp brown sugar 
  • 1/4 tsp cinnamon 
For the bars:
In a large saucepan over low heat, add the butter and marshmallows.
Stir until marshmallows are melted, then turn off heat and add the vanilla and cookie butter.
Once it’s all melted together, add in the Rice Krispies and stir until just combined.
Pour into a greased 9x13 pan and lightly pat down.
For the drizzle:
For the drizzle, just combine some melted cookie butter, powdered sugar, milk, brown sugar, and cinnamon.
Drizzle over the bars and enjoy!

    Never heard of cookie butter - it’s amazing! I decided to use just a half cup of cookie butter and no drizzle. Still delicious!

    Is the cookie butter with the regular butter? I've never heard of it.
