As a business owner, my fiancé hosts a golf tournament every year as a way to give back to our small town golf course and community. Therefore every year, I get to be in charge of making the dessert for over one hundred people. Between cookies and bars, I always try to make a little variety so this weekend I made pumpkin bars, Reese’s brownies, monster cookies, pumpkin snickerdoodles, and special k bars. And of course these caramel Rice Krispie bars, which might be my favorite. They are like regular Rice Krispie bars on steroids! Luckily they are just as easy too.

Ingredients
For the Rice Krispie bars:
  • 1/2 cup butter
  • 1 1/2 bags of mini marshmallows
  • 1 tsp vanilla extract
  • 7 cups Rice Krispies
For the caramel filling:
  • 1/4 cup butter
  • 1 can sweetened condensed milk
  • 1 bag of caramel bits
Instructions
For the Rice Krispie bars:
In a large saucepan over medium heat, melt butter.
And in marshmallows and vanilla extract.
Stir consistently until marshmallows are melted.
Add in Rice Krispies.
Pour half of the mixture into a greased 9x13 pan.
For the caramel filling:
In a small saucepan over medium heat, melt butter.
Add in the sweetened condensed milk and caramel bits.
Stir consistently until caramel is melted.
Pour over first layer of Rice Krispie bars.
Add the rest of the Rice Krispie mixture on top of the first two layers and spread evenly.
Let cool and harden slightly before cutting.
