My Favorite Plum Pie

This is one of my all time favorite desserts. I just like pies so much, more than any cake or muffin or cookie or whatever!

The only dilemma for me is whether my favorite is plum or apple pie! Somehow, I think it might be the plum!

In the summer time everything flourishes, we have so many ripe and delicious flavors to choose from. That is when I think of juicy pies. And plum is definitely the best one. All stone fruit is nice, it melts wonderfully when baking and gives a lovely jamy flavor.

Crust is really simple to make, fruit part even more simple than that. What is your excuse not to do this!? I think there could not be a reasonable one! Get to work and thank me later! And do not forget the ice cream!

Ingredients
For the crust
  • 300 g flour 10.58 oz
  • 230 g butter 8.11 oz
  • 2 tsp sugar
  • 1/2 tsp salt
  • 3-4 tbsp cold water
For the filling
  • 1 kg plums 35.27 oz
  • 6 tbsp sugar
  • 1 tsp cinnamon
  • 2 tsp cornstarch
  • 1 tbsp lemon juice
  • 1 tbsp vanilla extract
For the coating
  • 1 egg yolk
  • 2 tbsp milk
Instructions

Prepare the plums, cut each one into 3-4 pieces. Add 3 tbsp sugar and let it rest to release the juices and soften a little.
Use all the ingredients to make the dough. Let it chill in the fridge for at least half an hour.
When your dough is ready, take approximately 60% of it for the lower pie crust. This dough is too buttery and flaky so it’s not possible to roll it and transfer into the pie dish. So just use your hands and spread it in the pan directly. Sprinkle with a little cornstarch.
Drain the plums, add 3 tbsp sugar, 2 tsp cornstarch, lemon juice, cinnamon and vanilla. Combine well and and arrange them onto the crust. Now take the remaining dough and flake it on top by using your hands.
Mix one egg yolk with milk and coat the surface of the pie. Sprinkle with some brown sugar.
Bake on 190 deg C for 30 min, and another 15 min od 170 deg C.
Serve with vanilla ice cream!!!
