The first time I discovered Baked Oats, I couldn’t believe that something that tasted so much like a cake could actually be a healthy breakfast choice! Since then, I have experimented with all sorts of flavour combinations. This banana version works so well - but equally can be done with raspberries or blueberries if you prefer. Make sure to remember the baking powder since it lets the mixture rise to give that fluffy texture. I like to serve with with a spoon of Natural Greek yoghurt or vanilla yoghurt to give a bit of freshness to the meal.


The quantity can easily be double or more

Ingredients

  • 1 bananas 
  • 1/2 CUP Oats 
  • 1/2 CUP milk of choice
  • 1/2 TBSP honey 
  • 1/2 TSP Baking Powder 
  • 1 TSP Ground cinnamon 
  • Sprinkle of sea salt 
  • 1 TBSP raisins or chocolate chips  (optional) 
Instructions

Preheat the oven to 370•F. 
Lightly grease a small serving dish or two individual ramekins.
In a mix bowl, mash together one of the bananas into a purée before adding the cinnamon, honey, sprinkle of salt and baking powder. Mix together well, then add the oats and the milk. If adding raisins or choc chips, add these now and gently stir everything together well. 
Transfer the mixture to the dishes. Chop the other banana into rounds and arrange over the top of the mixture. Bake in the oven for around 30 minutes until golden.
