Try these individual peanut butter and banana baked protein oats filled with banana cream pudding. Super easy, quick, and delicious! These oats are unlike any baked oats I've had before because the center is filled with creamy pudding.
I woke up craving a sweet breakfast for once, as I normally opt for savory, but didn't feel like making the typical pancake or waffle. I whipped this up in no time and it was so good! I'm excited to try these using different flavors and fillings.
You can also add flavored (or unflavored) protein powder to these oats for that extra boost! This healthy meal is sure to impress!

Baked Peanut Butter & Banana Oats

Ingredients
For the Oats
- 1 banana
- 1 cup rolled oats
- 1 tbsp peanut butter
- 1 tbsp maple syrup
- 1 tsp baking powder
- 1 scoop vanilla protein powder (optional)
- 1 tbsp chia seeds (optional)
- banana pudding for the center (any flavor will do and can use pre-made pudding from grocery store)
For Serving
- icing sugar
- maple syrup
Instructions
- Preheat oven to 350F
- In a food processor or blender, add all ingredients EXCEPT the pudding
- Blend until everything until combined
- Add mixture to oven safe ramekins, filling them halfway and reserving some mix for the top
- Then add your pudding in the middle
- Cover with the remaining batter then bake for 20 minutes
- Top with icing sugar and syrup to serve
- Enjoy!

I’m English so don’t understand what is “ banana pudding “ and when I read on other recipes “ sticks” of butter as a measurement, I have no idea how many grams or lbs and ounces.
Hi Karen, sorry there’s no image of an instant box of banana pudding. Is it like a banana flavoured custard or Angel delight? Thanks for explaining the “ stick of butter”.
