Peanut Butter Bacon Banana Oatmeal

Baltimore has a lot of Elvis inspired things around town. Being from Memphis I was curious as to why there are multiple spots in this city that have images and cut outs of Elvis. I can’t get an actual answer from anyone either when I ask “What’s with all the Elvis stuff?”. Most answers have been, “We’ll he was the man!”. So I’m left to wonder what’s going on with it.



I decided to try to mix in some Memphis into mine and Val’s breakfast after being homesick one morning. Elvis’ favorite sandwich was a fried peanut butter and banana sandwich. I decided to play on that by making a peanut butter bacon banana oatmeal. Let’s be honest, what doesn’t get better by adding bacon to it? Not much.


We tried out a couple different recipes for the peanut butter sauce, but I finally found one I liked. It wasn’t easy to make such a tasteful sweet, but not too overpowering sauce. The first couple times we tried variations of milk as well and the texture/viscosity wasn’t right with almond and 2%. We love using  Bob’s Red Mill Rolled Oats for this recipe. Once we got the recipe down, Val looked at me and said “Yup! That’s it!”. I knew I was right on the money.


Eating this breakfast gave me a taste of home and really hit the spot. After eating this, I’m thinking about actually doing a fried peanut butter and banana sandwich. Until I actually do it I might just stick to doing variations of things that remind me of home.

Peanut Butter Bacon Banana Oatmeal

  • Prep time: 5 Minutes Cook time: 15 Minutes Total time: 20 min

Ingredients
Peanut butter sauce
  • 4 tbsp creamy peanut butter
  • 5 tbsp whipping cream
  • 2 tsbp maple syrup
Oatmeal
  • 1½ cups oats
  • 1 pinch salt
  • 3 cups water
Toppers
  • 4 slices maple bacon crumbled
  • 1 banana sliced
Instructions

Add all ingredients to sauce pan
Mix all ingredients together and continue to stir on low heat
Let simmer while stirring for 4-5 minutes until sauce looks and tastes ready
Follow instructions for oatmeal on package
Cook bacon, let rest, and crumble. Slice up banana
Add all together in a bowl and enjoy

    I have a feeling those who don’t pre-read the entire instructions, may find the recipe has gone a rye. Step one is to add then mix all ingredients, but farther down has separate steps for some ingredients..
