Peanut Butter and Banana Oat Cookies

We are all looking for a quick snack or "on-the-go" breakfast from time to time. and this 4-ingredient "cookie" checks all the boxes. It comes together in under 20 minutes and that is with baking time!


If there is one thing I can't stand it's when my bananas go bad! And it seems every week, there are always two in the bunch that ripen just past the point where no one wants to eat them...so what do I do? Mash them up and make these awesome cookies!


Start by mashing the bananas and mix in the peanut butter until well combined. Add the rolled oats and mini chocolate chips, if using. Stir to combine. Using a scoop with an ejector, and place on the cookie sheet... pop in the oven for 8-10 minutes until the the cookies set and the edges are lightly golden brown.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/4 cup smooth peanut butter
  • 1/3 cup mini semi-sweet chocolate chips
Instructions

Preheat the oven to 350 degrees.
In a medium bowl, smash the ripe bananas. Add in the peanut butter and stir to combine. Then add the rolled oats and mini semi-sweet chocolate chips, if using. Combine all the ingredients until all is distributed well throughout the mixture.
Using a 1-inch scoop with an ejector, place the cookies on a non-stick baking sheet and bake for approx 8-10 minutes, or until the cookies have a light brown color.

    My kind of cookie...simple and no added sugar. I don't have any bananas on hand at the moment but I want to make a batch so I am going to sub unsweetened applesauce.

      PS... I even tried buttercup squash instead of bananas... was good!
