A perfect snack cake for your afternoon coffee...
A soft, fluffy coffee cake!
Am I the only one that always needs something a little sweet in the afternoon? Usually when I'm taking my coffee or tea, a slice of cake sounds so wonderful. This cake is just IT. It is so fluffy and so full of flavor, making it the perfect snack cake.
This recipe uses simple ingredients that one would already have in their pantry.
Use all-purpose flour for best results. I have not tried other flours but if you do, feel free to leave a comment below!
You can use dairy-free yogurt or regular.
Use baking powder, baking soda, cinnamon, coffee granules and salt.
You will need unsalted butter and chocolate chips, I used vegan but you can use regular if you prefer.
You will also need granulated sugar and finally 2 eggs.
You don’t really need much to make this recipe and you can easily use what you already have on hand.
You will need:
- 1 mixing bowl + hand mixer or 1 stand mixer
- 1 cake pan (I used a 20cm one)
For measuring: 1/4 tsp, 1 tsp, 1/2 cup, 1 cup.
