Ingredients

  • 1 cup water I also love to use unsweetened vanilla almond milk here.
  • 1/2 cup old fashioned oats
  • 1/4 teaspoon salt
  • 1/2 cup fresh or frozen blueberries
  • walnuts for topping optional
  • pepitas optional
  • maple syrup amount will depend on your preference for sweetness.
Instructions

Bring water and salt to a boil over medium heat in small saucepan. Add oats and reduce heat to low. Add in half the blueberries, and continue to cook until the liquid is absorbed and the oatmeal slightly tender. Spoon into your serving dish. Top with your topping the remaining blueberries and toppings of choice. I love a generous drizzle of maple syrup, but that is a personal preference, finish it how you would like. Now, sit back and enjoy. You deserve it!
