Applesauce Muffins

Summer is awesome but I can’t help but get excited for the fall! This recipe is perfect for those going back to school or for anyone looking to add in a healthy snack to their day. If you do not have unsweetened applesauce and unsweetened plant-based milk and only have the sweetened versions, you can simply lower the raw date sugar to your liking. Feel free to add in nuts such as walnuts for an extra crunch as well. If you do not have raw date sugar, feel free to sub-in any type of sugar. I hope you all enjoy this recipe as much as I did!

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 1/2 cup + 2 tbsp rolled oats
  • 1/2 cup + 2 tbsp unsweetened applesauce
  • 1/4 cup unsweetened oat milk (or other plant-based milk)
  • 1/2 egg replacer
  • 2 tbsp melted vegan butter or coconut oil
  • 1/4 cup raw date sugar or any other sugar
Instructions

Preheat the oven to 375°F (or 190°C) and prepare a muffin tin with 6-7 muffin liners or silicone cups.
In a large mixing bowl, sift together the flour, baking powder, baking soda, cinnamon and salt.
In a separate medium bowl, mix together the oats, applesauce, oat milk, egg replacer and vegan butter or coconut oil. Mix until combined.
Make a well in the dry ingredients mixture and pour in the wet mixture in the middle. Mix until JUST combined, do not over mix.
Scoop the mixture into your prepared muffin cups and bake for 20 minutes or until a toothpick inserted into the center comes out clean.

    1/2 egg replacer??

      Yes. I use store bought egg replacer powder which is mixed with water. If you do not have it, you can also use half of a flax egg (1/2 flax egg is 1/2 tbsp flaxseed meal + 1.25 tbsp water).

    Nowhere in the recipe do you show that the 2 tablespoons of rolled oats and possibly the sugar gets sprinkled on top of the muffin batter. Nowhere in the recipe do you say where to put the sugar and because the picture shows oats on the top of the muffin I assume that the 2 tablespoons get sprinkled on top of the muffin. Does that also apply to the sugar? Please respond with an answer.

      Also can I use egg white as the egg replacer, some thing I’ve never heard of before and I’ve been baking for 75 years. I would like to try this recipe but not until I’ve got all the required information, egg replacer 2 tablespoons of rolled oats and quarter cup of sugar.
