Applesauce Cinnamon Muffins

These muffins are a cross between a cinnamon sugar donut and a muffin. They are easy to make and freeze very well. I made several of these for the grandchildren to try and they kind of ate most of them before I knew it. Apparantly they loved them. I was able to freeze a few to try that out. I did not want to tell you they froze well if they didn't. You can use regular applesauce like I did or cinnamon applesauce. I also think next time I am going to add bits of apples to them. First mix your sugars, oil and egg together just with a whisk. I did not use an electric mixer. Mix until combined. Then add applesauce, sour cream, milk and vanilla. Mix together. Add in the flour baking powder and cinnamon and salt. Stir until just combined. Scoop into your muffin pan and bake. Then you roll them into the sugar cinnamon mixture that is where the magic happens.

Start mixing your wet ingredients together. I just used a whisk to mix everything together and it is in one bowl so that is really nice for clean up.

Add in the applesauce and sour cream.

I did them in soe heart muffin cups.

Don't they look delicious? They bake up puffy and perfect.

They need no butter they are just perfectly sweet.

Ingredients
Muffin mixture
  • 1/3 c granulated sugar
  • 1/3 c brown sugar
  • 1/3 c vegetable oil
  • 1 large egg
  • 1 c applesauce
  • 1/4 c sour cream
  • 2 T milk
  • 1 t vanilla extract
  • 2 c flour
  • 1 1/2 t baking powder
  • 1 t cinnamon
  • 1/4 t salt
Cinnamon and sugar mixture
  • 4 T butter melted
  • 1/3 granulated sugar
  • 1 1/2 t cinnamon
Instructions
Muffins
Heat oven to 350 degrees
Line a 12 cup muffin pan with liners or greased.
IN a m bowl stir together sugar, oil and egg.
Add applesauce, sour cream, milk and vanilla, stir until combined
Add flour, baking powder and cinnamon and salt. Stir together.
Scoop your batter into each muffin cup. I do about 3/4 full.
Bake for 16-20 minutes.
Let the muffins cool for a few minutes
While they are cooling make the sugar mixture.
Cinnamon sugar mixture
Put the melted butter in one dish
Mix the cinnamon and sugar together in another bowl.
After the muffins have cooled to the touch roll them into the butter and then the cinnamon mixture and set on cooling racks with waxed paper underneath to catch the crumbs.
