Gluten Free Healthy Applesauce and Oats Muffins

As a mom of young children, there are a few things we always have in the pantry, included in those ingredients are applesauce and oats.


I like to tweak recipes when I can to make them a bit more healthy when possible.


It's easy to make substitutions when baking that will make your treats a bit healthier. You can use applesauce in place of oil in most baking dishes.


After you give these muffins a try, find more healthy recipes that will quickly become your favorites.

Sure boxed muffin mixes you buy in the store taste good, but they contain a lot of added sugar.


I prefer to make my own muffins at home using less sugar. Also, box mixes tend to make about 12 muffins. Sometimes, I just want to make a few muffins.

I came up with a small batch of healthy muffin recipe. These muffins are low in sugar, and low in fat, but also taste good. These are also gluten-free muffins because they are made using oats instead of wheat flour.


This recipe makes about 6 regular-sized muffins or 9 small muffins.


With only 5 ingredients and 30 minutes, you will have a delicious and healthy breakfast for the week.


  • 3/4 cup of ground oats (I grind my own in a food processor.) Skip grinding and use whole oats for a more crunchy muffin.
  • 1/2 teaspoon baking powder
  • 1 tsp sugar (you can use coconut sugar, white, or brown sugar. Add more if you like your muffins more on the sweet side.)
  • 1 4 oz single-serve applesauce cup, or 1/2 cup applesauce (you can use either sweetened or unsweetened applesauce.)
  • 1 large egg



Preheat your oven to 400 and line your muffin tin with paper liners or spray each cup with a non-stick cooking spray.


Combine all ingredients and mix in a medium size bowl. Fill each muffin cup 1/2 way to 2/3 of the way full.


Bake for 14 minutes at 400.

This recipe is easily modified to add extra flavor. Mix in fresh blueberries or cinnamon to add different and extra flavors.


To give your muffins extra crunch, use whole oats or add bits of chopped apples to your mixture.

Quick and Easy
Preheat the oven to 400 degrees
Line muffin cups with paper liners or spray with a non-stick cooking spray
Mix all ingredients in a bowl
Fill muffins cups 1/2 way to 2/3 full
Bake for 14 minutes
Tips
  • Add blueberries, cinnamon, or apple bits for extra flavor.
