This baked berry oatmeal is made from simple ingredients and is topped with coconut whipped cream. It's the perfect breakfast to wake up to.


Baked berry oatmeal with coconut whipped cream is one of my favorite things to have for breakfast. It tastes like dessert, but is actually healthy and you can feel good knowing it’s low in sugar and refined sugar-free.


Not to mention, it's so much better for you than traditional packaged oatmeal, which is filled with processed sugars, additives, and unneeded flavors. This oatmeal requires only a few simple ingredients. It is gluten-free, dairy-free, and even vegan friendly (just swap the eggs for flax eggs).

Ingredients

  • ▢ 2 1/2 cups gluten-free rolled oats (if not gluten free, doesn't need to be certified gluten free)
  • ▢ 2 tsp. ground cinnamon
  • ▢ 2 tsp. baking powder
  • ▢ 1/2 tsp. salt
  • ▢ 1 1/2 cups non-dairy milk (dairy milk will work if not dairy free)
  • ▢ 1/4 cup pure maple syrup
  • ▢ 2 eggs (or sub 2 flax eggs if vegan)
  • ▢ 2 tsp. pure vanilla extract
  • ▢ 1 1/2 cups fresh or frozen blueberries
  • ▢ 1 cup fresh blackberries, cut in half lengthwise
  • ▢ coconut whipped cream for serving optional
Instructions

Preheat oven to 375.
Lightly grease an 8x8 or 9x9 baking dish.
In a large mixing bowl, combine the oats, cinnamon, baking powder, and salt.
Create a well in the oat mix and add the milk, maple syrup, eggs, and vanilla. Whisk the eggs first and then mix all the ingredients together.
Place the blueberries on the bottom of the prepared baking dish and pour the oatmeal mix over blueberries. Gently stir the blueberries into oatmeal. Place the sliced blackberries on top of the oatmeal mix.
Bake for 35-40 minutes, or until edges and middle of oats have set.
Let cool slightly (you still want it warm) and top with some optional coconut whipped cream and/or pure maple syrup.

Tips
  • Leftovers will stay good in the fridge for 3-4 days and it's just as good reheated.
