Fall is one of my favorite seasons for so many reasons! But being able to bake recipes with apples is definitely in my top FIVE! And since I live a short distance a way from the Apple Capital of Minnesota, I have plenty of delicious apples to choose from! There is nothing that says fall more to me than the smell of apples and cinnamon throughout our kitchen! You'll definitely get that when you bake this Apple Cake, but you'll get so much more! Like one of the moistest cakes EVER, topped with a sweet buttery glaze and crunchy nuts!

This cake is one of my favorite apple desserts and it's SUPER easy to make too!

Ingredients
For the Apple Cake
  • 1 1/2 cups vegetable oil
  • 3 eggs
  • 2 cups white sugar
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla
  • 3 cups diced apples
  • 2 tsp cinnamon divided
  • 1 cup chopped nuts almonds, walnuts
For the Glaze
  • 1/4 cup butter
  • 1 cup brown sugar
  • 1/2 cup half and half
  • 1/2 cup powdered sugar
Instructions
To make the Cake
Preheat the oven to 325.
Grease and flour bundt cake pan. Set aside.
Combine oil, eggs, and sugar in a large mixing bowl. Whisk together until smooth.
Combine flour, 1 tsp of cinnamon, and baking soda in a medium bowl.
Add the dry ingredients to the wet, stirring until just combined.
Fold in apples, salt, and vanilla.
Pour the batter into pan. Sprinkle remaining 1 tsp of cinnamon over cake batter.
Bake for 1 hour or until a toothpick inserted comes out clean. Allow to cool completely before removing from the pan.
To make the Glaze
Combine butter, sugar, and half and a half in a medium saucepan.
Cook over low heat until sugar dissolves.
Let cool for 5 minutes and then whisk in the powdered sugar.
Pour glaze over cooled cake. Sprinkle with nuts before frosting sets.
