Refreshing Ginger Lemonade

This refreshing ginger lemonade is the perfect beverage for summer. This sweet lemonade has a little tang from the lemon and spice from the ginger. It will be your new favorite summer drink.

What is your favorite thing to do during the summer? A dip in the local swimming hole? a summer concert on the lawn? a happy hour with friends on your favorite restaurant patio? or maybe all of those? Yea. Me too.Well, this year it looks as though COVID has squashed all of our summer plans and most of those classic summer events are canceled. It sucks. But I’ll be honest, even though this summer is way different than I expected, this experience has forced me to enjoy the small stuff. It has forced me to slow down and just enjoy being outside in my backyard or going for a walk. Ya know, just simply living.It is easy to get distracted or put large expectations on something like summer activities, but the small stuff is what really makes it enjoyable. Like an ice-cold glass of lemonade on a hot day. Uh yum! That’s right up there with the smell of fresh-cut grass. Summer is still here, we are just experiencing it in a different way.

This ginger lemonade is definitely something I want to experience many times this summer. It’s like summer in a glass! You know how much I love ginger; it’s in so many of my baking recipes including my Lemon Ginger Bundt Cake (which now that I think about it is sort of like a baked version of this lemonade!) and these Strawberry Ginger Cupcakes, but I mostly use ginger in my drink recipes.A quick story about me, when I was young I had an extremely anxious stomach. I was constantly needing reassurance from my parents that I was not going to be sick. It became a nervous habit that probably drove most of my family crazy but it was my way of gaining control over my constant stomach aches.

It became part of my daily life and after years we discovered remedies that worked, including ginger. Since childhood, I have learned so many methods to soothing not just my stomach, but my anxiety in general. To this day, I still use ginger to soothe my anxious stomach, and most of the time you can count on me to have ginger candies in my purse. Anxiety is such a B, isn’t it?Anyways, I think this may be part of the reason I put ginger in everything. It works and it tastes so dang good! This freshly squeezed ginger lemonade is no exception, you will fall in love with it. It will quickly become a summer staple and one you will look forward to enjoying.This lemonade starts with fresh ginger, ginger peels, and lemon zest that soaks in water to really boost the flavors. It is then blended, strained, and mixed with sugar and freshly squeezed lemon juice. It’s a little tangy from the lemon, a little spicy from the ginger, and a whole lot of refreshing.

What’s even better, is how easy it is so make. No boiling necessary, just a little soaking, blending and enjoying. Add a little whiskey to this lemonade for a delicious adult beverage.

Ingredients

  • 1 large piece of ginger
  • 1 cup freshly squeezed lemon juice
  • 2 tablespoons lemon zest – from 2 lemons
  • 6 cups water
  • 1/2 cup sugar
Instructions

Using a spoon, scrape the peel off the ginger and chop into medium pieces.
Add the ginger peels, chopped ginger, and lemon zest into a pitcher with 2 cups of the water.
Place the pitcher in the refrigerator to chill for at least an hour.
Pour the lemon-ginger mixture into a blender and blend until smooth. Strain through a fine strainer to remove pulp.
Add the lemon juice, sugar, and remaining 4 cups of water and mix. Place in the fridge to chill; serve over ice and garnish with a lemon slice and a spring of mint.
