- 2 cups canned chickpeas, drained and rinsed
- 1 cup fresh spinach, washed and chopped
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh parsley, chopped
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking soda
- 2 tablespoons all-purpose flour or chickpea flour (for a gluten-free option)
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Prepare the Ingredients:
- Rinse and drain the canned chickpeas thoroughly.
- Wash and chop the fresh spinach, cilantro, parsley, and green onions.
- Mince the garlic cloves.
- Combine Ingredients:
- In a food processor, combine the chickpeas, spinach, cilantro, parsley, green onions, and minced garlic.
- Pulse the mixture until it becomes a coarse paste.
- Add Seasonings:
- Add the ground cumin, ground coriander, baking soda, all-purpose flour (or chickpea flour), salt, and pepper to the mixture.
- Pulse again until all ingredients are well combined.
- Check Consistency:
- The mixture should be slightly coarse but easily moldable. If it's too wet, add a little more flour. If it's too dry, you can add a splash of water.
- Shape into Balls:
- Scoop out portions of the mixture and shape them into small balls, about 1 to 1.5 inches in diameter. You can use your hands or a falafel scoop.
- Heat Oil:
- In a deep skillet or frying pan, heat vegetable oil over medium heat.
- Fry the Falafel:
- Carefully place the falafel balls into the hot oil, a few at a time, ensuring they are not overcrowded.
- Fry until golden brown and crispy, turning them to cook evenly on all sides. This typically takes about 3-4 minutes.
- Drain Excess Oil:
