Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 cup fresh spinach, washed and chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh parsley, chopped
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking soda
  • 2 tablespoons all-purpose flour or chickpea flour (for a gluten-free option)
  • Salt and pepper to taste
  • Vegetable oil for frying
Instructions

Prepare the Ingredients:
Rinse and drain the canned chickpeas thoroughly.
Wash and chop the fresh spinach, cilantro, parsley, and green onions.
Mince the garlic cloves.
Combine Ingredients:
In a food processor, combine the chickpeas, spinach, cilantro, parsley, green onions, and minced garlic.
Pulse the mixture until it becomes a coarse paste.
Add Seasonings:
Add the ground cumin, ground coriander, baking soda, all-purpose flour (or chickpea flour), salt, and pepper to the mixture.
Pulse again until all ingredients are well combined.
Check Consistency:
The mixture should be slightly coarse but easily moldable. If it's too wet, add a little more flour. If it's too dry, you can add a splash of water.
Shape into Balls:
Scoop out portions of the mixture and shape them into small balls, about 1 to 1.5 inches in diameter. You can use your hands or a falafel scoop.
Heat Oil:
In a deep skillet or frying pan, heat vegetable oil over medium heat.
Fry the Falafel:
Carefully place the falafel balls into the hot oil, a few at a time, ensuring they are not overcrowded.
Fry until golden brown and crispy, turning them to cook evenly on all sides. This typically takes about 3-4 minutes.
Drain Excess Oil:
Once done, use a slotted spoon to transfer the falafel to a plate lined with paper towels to drain any excess oil.
Serve:
Serve the green falafel warm with your favorite dipping sauce, such as tahini sauce or yogurt-based dressing.
