Red Lentil and Roasted Red and Yellow Beet Falafel

I am a huge fan of beets. Not only because I love the flavor, but their color is amazing on their own and as ingredients on other recipes. I am also a fan of falafel, so I decided to mix the two. As I started to prepare my ingredients, I realized I was out of garbanzo beans, but I found red lentils and thought I'd make beet and lentil falafel instead. Boy was I amazed by the result! Not only do lentils need less soaking time than garbanzo beans, the color I obtained when mixed with the beets was amazing! Oh, and I made them in the air fryer so I ate a bunch of them guilt free!
Red Lentil and Roasted Red and Yellow Beet Falafel

Ingredients
For the Roasted Beets
- 1 red beet peeled and diced
- 1 golden beet peeled and diced
- juice of half a lemon
- 1 tsp olive oil
For the falafel
- 1 cup red lentils soaked for 2 hrs and drained
- 1/3 cup of roasted red beets, chopped
- 1/3 cup of golden beets, chopped
- 3 garlic cloves
- 2 tbsp chopped cilantro leaves
- 2 tbsp chopped mint leaves
- 1/2 tsp cumin powder
- 1/2 tsp ginger powder
- 1/2 tsp coriander powder
- 1/4 tsp cinnamon powder
- 1 tbsp flour
- salt and pepper to taste
Instructions
For the Roasted Beets
- Heat oven to 350F
- Place red beets and golden beets on baking sheet. Do not mix them. Drizzle olive oil on top and add salt to taste.
- Bake until cooked, about 15-20 mins
For the Falafel
- Add soaked and drained lentils to bowl of food processor. Add all other ingredients, except beets and process until well combined but not overly mashed.
- Divide lentil mixture in half. Mix one half with 1/3 cup of roasted golden beets. Process this half in food processor again just to combine. Remove and set aside in a bowl.
- Mix the other half with 1/3 cup roasted red beets and process until combined. Remove and place in a bowl
- Divide each mixture into 6 ball. Flatten each ball a little bit.
- Coat the falafel with oil spray and air fry for 18 minutes at 375F
- Serve with tzatziki
Tips
- If you really want a bright yellow/green color on your falafel, blanch the diced golden beets on boiling water for 5 mins before roasting.
- If you find the mixture is a bit sticky, flour your hands before making each ball.
