As a little girl, I was fortunate enough to grow up with a stay at home mom who cooked fresh delicious meals everyday.

My mom's way of cooking have influenced the way we cook and eat until this day and I'm so glad I have this platform to share these delicious recipes with you 😊 Now let me tell you a little about cauliflower, not only incredibly healthy and packed with fiber and nutrients! This super vegetable is so versatile and can be made into pretty much anything!

Today we're having a magnificent, zesty, cilantro and garlic cauliflower dish. It's light and easy to make and can satisfy any taste! You can have it with a side of soup or salad and some crispy pitas bread ❤

Ingredients

  • 2 large heads cauliflower chopped
  • 1 bunch cilantro finely chopped
  • 3 garlic cloves minced
  • 1 lemon juiced
  • Olive oil
  • Salt and pepper to taste
Instructions

In a baking dish, add cauliflower and drizzle it with olive oil, salt and pepper.
Next, cover it lightly with tin foil or dampened parchment paper then bake it with the tin foil on for about 30 minutes.
Then remove the tin foil and let it roast for a few more minutes until the cauliflower turn into golden color.
In a separate pan, add olive oil, minced garlic and saute until the garlic is infused in the oil.
Then add the cauliflower and toss it gently on low heat.
Finally add fresh cilantro, lemon juice and adjust the salt and pepper to taste and voila!!

  • This dish could be had on its own or with a side of pita bread or rice.
