Roasted Broccoli (From Frozen)
Roasted vegetables are a favorite in my home and so is time saving recipes. With a toddler and a 5 month old running around, time for cooking has been limited recently, which is why I look for any short cuts I can find.
One amazing short cut I like to use in the kitchen is cooking with frozen vegetables. Utilizing frozen vegetables saves time as they do not need to be washed and prepared like fresh vegetables do. The most amazing part is that they are cheaper and do not need to be thawed before cooking. They can be thrown in the oven frozen and roasted just as easily as fresh vegetables can.
Simply toss frozen broccoli in a tablespoon of olive oil and 2 tbsp. ranch seasoning mix (or whatever seasoning you like) and place on baking sheet.
Roast at 425 degrees for 25 minutes or until slightly crispy on edges.
Roasting gives vegetables a nice savory charred flavor, making them more enjoyable to most people, especially kids.
Sprinkle the roasted broccoli with parmesan cheese at the end for added flavor.

Ingredients
- 12 oz. frozen broccoli
- 1 tbsp. olive oil
- 2 tbsp. ranch seasoning (or any seasoning you like)
- 2 tbsp. parmesan cheese (optional)
Instructions
- Preheat oven to 425 degrees F
- Toss frozen broccoli with olive oil and seasonings
- Place on non-stick baking sheet
- Bake for 25 minutes or until slightly crispy on edges
- Sprinkle with parmesan cheese before serving (optional)
