Pineapple Blender Salsa

My original blender salsa recipe has been popular for years, so I thought why not take it up a notch by adding pineapple to the mix!

We are in the heart of salsa season. Whether that be ordering your favorite bowl at the local Mexican restaurant at dinner or making a batch of your own at home. I often refer back to this fun list ( 25 great salsa recipes) during the Summer to whip up a fun and new batch to keep things interesting.....and today's recipe will need to be added to this list! Fresh salsa, in my opinion, is the BEST. I'm definitely not above grabbing store bought jars and throwing them in my grocery cart, but I do feel that fresh batches just have the greatest flavor. Plus, the veggies in the Summer are at their peak so everything just tastes better.

The idea for this recipe came to me while strolling by the pineapple in the grocery store. I had been craving homemade salsa and thought, "why not sweeten it up a bit and throw in some pineapple"? I've often enjoyed fruity salsas (as long as they aren't too sweet) so I got to work and tried making my own. I love this version because the pineapple is not overpowering, but you can still taste it! It really is the best of both sweet and savory.

The only thing better than this bowl of Pineapple Salsa and tortilla chips is a chilled margarita on the side! They really go great together. I'm already planning on making a batch of this to take on vacation soon and I'll definitely be making for our next girl's night. In the Summer we usually gather on a patio with lots of snacks and drinks - this salsa will make an appearance! So grab your blender (or food processor) and get to work on this salsa. It comes together in less than 10 minutes and you can eat it right away!

Ingredients

  • 28 oz can whole tomatoes (drained, you can use fresh but be sure to squeeze out all the juice & seeds)
  • 1 small white onion
  • 2 cloves garlic
  • 1 jalapeno, de-seeded
  • 1 cup canned pineapple, drained
  • 1 t cumin
  • 1 t salt
  • handful of fresh cilantro (more/less depending on your preference)
Instructions

Using a blender or food processer, pulse together the onion, garlic and jalapeno into small pieces.
Add in the remaining ingredients - tomatoes, pineapple, seasonings and cilantro.
Pulse this mixture to your desired consistency.
Eat fresh right away or refrigerate covered for up to 1 week.
