These delicious crispy accordion potatoes are made in the air fryer for a quick and easy side dish! You’ll love how easy it is to make this tasty recipe!

What are accordion potatoes?


Accordion potatoes are simply potatoes are sliced in a way that makes them fan out like an accordion. To make accordion potatoes, the potato is sliced thinly almost all the way through, leaving the bottom of the potato intact so that it holds together. The potato is then seasoned with herbs, spices, and/or butter before being baked until crispy and tender. These are made in the air fryer so they cook quickly with minimal oil, but they end up deliciously crispy!

  • Potatoes– I recommend using Yukon Gold potatoes for this recipe.
  • Oil– I used olive oil but you can use any kind of oil.
  • Seasonings– I seasoned this with salt and served them with this dipping sauce but you can add any other seasonings you like. I have suggestions below!


What are Yukon Gold Potatoes?


Yukon gold potatoes, also called golden potatoes, are a type of potato that is popular for its golden yellow flesh and thin, smooth skin. Compared to other types of potatoes, golden potatoes have a medium starch content, which means they hold their shape well when cooked and are less likely to become mushy.


How to Make Accordion Potatoes
Peel the potatoes and rinse them under cold water. Pat them dry with a kitchen towel. Slice the potatoes into 1/2″ thick slices.
Place the potatoes on the cutting board with a chopstick on each side. Slice partway down the potato, letting the chopstick stop the knife from going all the way through the potato.
Flip the potato and cut the other side diagonally, letting the chopstick stop the knife from going all the way through the potato.
Toss the potatoes with olive oil and salt.
Air fry at 350 degrees for 20-25 minutes until golden brown on each side flipping once halfway through cooking.
Season with additional salt to taste, if desired.
Seasoning Ideas


If you want to add additional seasonings to these potatoes, here are a few of my favorites:


  • Cajun seasoning: A blend of spices that includes paprika, garlic, onion, and cayenne pepper can give your potatoes a bit of heat and complexity.
  • Chili powder: A sprinkle of chili powder can add a bit of heat and smoky flavor to your potatoes.
  • Parmesan cheese: Grated Parmesan cheese can add a salty, cheesy flavor.
  • Ranch seasoning: This seasoning blend, which includes garlic, onion, dill, and parsley, can add a tangy, herbaceous flavor. I buy it at Trader Joe’s!
  • Curry powder: This spice blend can add an exotic, slightly spicy flavor, which is a great way to switch it up!


Tips for the Best Crispy Air Fryer Potatoes


Preheat the air fryer: It’s important to preheat the air fryer for a few minutes before adding your potatoes. This helps create a hot environment that will crisp up the potatoes quickly. Preheating also ensures that the potatoes cook evenly and don’t stick together.

Cut the potatoes evenly: To ensure they cook evenly, it’s important to cut them into uniform pieces. Try to cut the potatoes into similar sizes and shapes, and aim for a thickness of about 1/2 inch.

Avoid overcrowding: Don’t overcrowd the air fryer basket; this can prevent the potatoes from crisping properly. Instead, cook the potatoes in batches or use a larger air fryer. Remember that the more space the potatoes have, the crispier they will be.
