This twist on a classic mojito cocktail is lightly sweetened with hints of melon, lime, and mint. The Melon Mojito is a refreshing cocktail for spring and summer.

There’s a reason that mojitos are such a popular cocktail—they’re light and refreshing. They’re also quite easy to make for your guests. Simply muddle some mint and lime with rum in a glass, then add ice, and top with club soda. Give the cocktail a gentle shake, and you’re ready to sip and relax.

While I love a classic mojito, this cocktail also lends itself to introducing a variety of fun flavors. (Check out these other fun mojito flavors.) Midori adds such a festive color to cocktails, so I thought why not try it in a mojito. It definitely makes for a refreshing cocktail that is lightly sweetened without having to add additional sugar or simple syrup.

Or, you can create a pitcher version or mojito bar for guests to serve themselves. Depending on the personalities of your guests, this can be a fun interactive experience.

Why is my mojito bitter?When muddling your mojito, you need to be gentle. Only muddle enough to release the oils in the mint and the juice in the lime. If you muddle the mint to intensely, you you will release the bitter-tasting chlorophyll from the leaves.


MELON MOJITO INGREDIENTS:

  • Rum: A Cuban rum is traditional, but use any rum that you enjoy.
  • Midori: Adds the melon flavor, and eliminates the need for simple syrup or sugar.
  • Mint: It’s the refreshing element in this cocktail.
  • Lime: Not just a flavor component—it cuts through the sweetness of the rum and midori.
  • Club soda: Lightens this cocktail to make it refreshing.


HOW TO PREPARE A MELON MOJITO:

  • Begin by slicing a lime in half through the stem end. Slice into half moons.
  • Add the rum and Midori to a cocktail shaker. Drop in 4-5 mint leaves and 4 lime slices. Lightly muddle the mint and lime together with the liquor.
  • Strain into a glass of ice, then top with club soda. Give the ingredients a stir, then add a lime wheel and mint leaf for garnish.
  • Alternatively, muddle the mint and lime together with the liquor in a highball glass, top with ice and club soda, then shake gently, and pour back into the glass. It’s simply a personal preference if you want to keep the muddled lime and mint in the glass.
Pour the Midori into a shaker.
Add the rum.
Drop in mint leaves.
Add the lime slices.
Gently muddle ingredients.
Strain into a highball glass with ice.
Top with club soda.

  • Add the rum and midori to a pitcher.
  • Drop in the mint and lime leaves, and muddle the ingredients together.
  • Strain out the mint and lime, then top with club soda. (If not serving immediately, wait to add the club soda until just before serving.)
  • Fill a highball glass with ice, then top with the mojito mixture. Add fresh lime and mint for garnish.


SERVING SUGGESTIONS:

  • Garnish with fresh melon balls if desired.
  • Set up a mojito bar, and let your guests mix their own drinks. Have everything prepped, and they can add their own lime and mint to muddle. Simply precut the limes, and place them in a bowl.   • Rum: Some people prefer to use vodka in their mojitos. While it may not be traditional, I’m in the camp of use the liquor you like. I’ve even been seeing tequila mojitos on more bar menus. If you go the tequila route, I would recommend a tequila blanco.

  • Make sure to lightly muddle the mint and lime so as to release the oils from the mint but not the chlorophyll. The release of chlorophyll adds a bitter note.
