For the Salad
  • 1, 15.8oz can of white beans, drained and rinsed
  • 1 medium cucumber, peeled and diced
  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes, sliced in half or kept whole
  • 1/4 cup feta cheese
For the dressing
  • 1/2 lemon, juiced
  • 3 tbsp. olive oil
  • 1 tbsp. honey
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • salt and pepper to taste

Toss together all of the salad ingredients in a large bowl
Whisk all of the dressing ingredients in a small bowl
Pour dressing over salad and toss
Serve immediately or chill in the refrigerator for an hour before serving
  • Love beans! This looks marvelous! I do something similar with kidney beans. Love your dressing recipe, looks to be the right balance. More beans on my shopping list! Thanks for sharing.

    Sounds good but I'll have to skip the feta.

      Try using the Mexican white cheese. It is very similar to feta and can be crumbled like feta. Milder taste. Can be used to make con queso as well.
