Ingredients
For the Salad
  • 1, 15.8oz can of white beans, drained and rinsed
  • 1 medium cucumber, peeled and diced
  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes, sliced in half or kept whole
  • 1/4 cup feta cheese
For the dressing
  • 1/2 lemon, juiced
  • 3 tbsp. olive oil
  • 1 tbsp. honey
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • salt and pepper to taste
Instructions

Toss together all of the salad ingredients in a large bowl
Whisk all of the dressing ingredients in a small bowl
Pour dressing over salad and toss
Serve immediately or chill in the refrigerator for an hour before serving
