Air Fryer Zucchini Fries are tender on the inside and super crispy on the outside. This recipe will get even picky eaters eating their veggies.

Whether you serve air fried zucchini as an appetizer, snack or a side dish, they will definitely receive rave reviews. They’re great on their own, or add your favorite dipping sauce.


I have to admit, I’m totally in love with my air fryer. To be honest, I didn’t think I’d love it as much as I do. Our model resembles a toaster oven in size, so it can handle a good amount of food. It’s also a total work horse. Besides being an air fryer, it has additional settings for toasting, baking, broiling, and rotisserie. We use ours almost every day.


The secret to that super crispy exterior? A light coating of corn starch blended with seasoning. It dries the exterior of the zucchini while allowing the interior to remain nice and juicy.

Can I reheat leftovers?Absolutely. Simply place the zucchini fries in the air fryer basket, and reheat at 375ºF for about 5 minutes until heated through.


INGREDIENTS FOR RECIPE:

Panko: Use gluten-free panko crumbs to keep the recipe gluten-free.


Cornstarch dries the outer layer of the zucchini giving you a super crisp texture on the outside.

HOW TO PREPARE ZUCCHINI FRIES IN AN AIR FRYER:

(Note: I use an Emeril Power Air Fryer.)


  • Set the air fryer to 375ºF on the air fryer setting.
  • While the air fryer is preheating, cut the zucchini into long wedges. First, slice the ends off the zucchini, then slice in into lengthwise quarters. Slice the long wedges in half. Set aside.
  • Whisk the cornstarch, salt, pepper, garlic powder, and smoked paprika in a large bowl. Add the zucchini wedges, and toss to lightly coat.
  • Set up your dipping station: Whisk the egg into a large, shallow bowl. In a second shallow bowl, mix together the panko crumbs and the parmesan cheese.
  • Dip each zucchini fry is egg wash, then press into the breading mixture on each side.
  • Place the breaded zucchini fries on a lightly oiled air fryer basket taking care to leave space between each slice.
  • Cook in the 375ºF air fryer for 20 minutes. Serve as they are or with your favorite dipping sauce.
Cut zucchini into wedges.
Whisk together corn starch and spices.
Add the zucchini.
Toss to coat lightly.
Dip zucchini wedge in whisked egg.
Press into panko parmesan mixture.
Place in air fryer basket.
Cook for 20 minutes.
