Crock Pot Chicken Fajitas

This recipe for Crock Pot Chicken Fajitas could not be more simple or more versatile! It is seasoned with cumin, chili powder and garlic powder and loaded with salsa, red bell peppers and onions. There are so many ways to use this chicken once it is cooked that you will actually be excited for the leftovers.
This easy recipe is great for meal prep or busy weeknights. For this recipe you will need only 7 ingredients:
- Chicken Breast
- Red Bell Peppers
- Onions
- Salsa
- Chili Powder
- Garlic Powder
- Cumin

To make these slow cooker fajitas, start by slicing the peppers and onions and place them in the bottom of the crock pot. Clean the chicken breasts and place chicken on top of peppers and onions. Sprinkle the chicken with the seasonings and pour salsa on top!
Cook on low heat for 6-8 hours or high heat for 3-4 hours. Shred chicken and serve (see below for serving ideas).
There are probably endless ways to serve this chicken however here are three suggestions to get you started:
- Serve in flour tortillas like traditional fajitas. Try corn tortillas for a gluten free version.
- Serve in a bowl over rice (try homemade cilantro lime rice or mexican rice for additional flavor).
- Serve fajita mixture on top of a salad.
Now, fajitas would not be as exciting to me if it were not for the toppings! Here are our favorite toppings to add: diced tomatoes, chopped red onion, fresh cilantro, shredded lettuce, black beans, refried beans, shredded cheese, sour cream, olives, pico de gallo, guacamole, Homemade Salsa Verde with Pineapple, Tropical Salsa or any salsa of your choice.

If your crock pot is large enough this recipe can definitely be doubled to have for a party or lots of leftovers. Make this recipe and have lunch for the week even after enjoying it for Sunday dinner if you double the recipe.
How do I store leftovers?Leftovers should be cooled completely and then stored in an airtight container in the refrigerator for up to 5 days. For meal prep, place in separate containers that can easily be grabbed for one meal.
Can I use a different seasoning from the spices listed?Absolutely! Try another homemade fajita seasoning recipe or even taco seasoning will work well with this recipe. Be sure to add enough seasoning based on the large amount of meat being used.
Is this recipe good for meal prep?Yes, these delicious chicken fajitas are great for meal prep! This recipe has even more flavor the next day after it sits in the refrigerator overnight. For meal prep, place in individual serving containers with your desired sides such as rice to make for easy to grab meals.

Recipe details
Ingredients
- 3 pounds chicken breast
- 1-2 red bell peppers
- 1 sweet onion
- 8 oz jarred salsa
- 1 teaspoon chili powder
- 2 teaspoon garlic powder
- 1 1/2 tbsp cumin
Instructions
- Slice onion and red peppers into strips. Place into the bottom on the crock pot.
- Clean fat from chicken breasts and place on top of peppers and onions.
- Sprinkle chili powder, garlic powder and cumin over chicken.
- Top with salsa.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once chicken is cooked thoroughly, remove chicken from pot and shred using two forks. Return to the crock pot and stir into sauce and peppers and onions. *Do not drain this liquid as this will help to keep the chicken moist.
- Serve as desired and enjoy. (See post for serving suggestions.)
Tips
- Chili powder can be increased or decreased to your heat preference. Also, the jarred salsa can be used at any heat intensity.
