It is officially soup season where I live and I find myself craving a big bowl on the regular. With colder temperatures and (lots) of snow, nothing is cozier then some delicious soup, am I right?! Nothing is more simple then tossing all of the ingredients in your slow cooker and letting it simmer low and slow all day long. YUM!
I love this super simple crock pot soup. It is packed full of flavour! Tender chicken, a mix of delicious veggies and rice come together in a creamy broth to make up this hearty soup. Serve with a side salad or crusty bun/bread for a tasty lunch or dinner.

Ingredients
- 1 boneless skinless chicken breast
- 2 large carrots, diced
- 1 small white onion, diced
- 1 red bell pepper, diced
- 1 cup mushrooms, diced
- 1 tsp each; garlic salt, onion powder, salt, pepper and Italian seasoning
- 3 cups chicken broth
- 3/4 cup white rice, uncooked
- 3 cups fresh spinach
- 1 cup heavy cream
Instructions
- In a large crock pot, add in chicken breast, chopped vegetables, seasonings and chicken broth. Stir to combine.
- Cook on high for 4 hours (or low for 6).
- With 30 minutes left of cooking time, remove chicken breast and shred with 2 forks into bite sized pieces. Add it back to the crock pot.
- To the soup, add in spinach, rice and heavy cream. Give everything a big stir and cover for remaining 30 minutes.
- Once cooked through, serve hot and enjoy!
- Store left overs in the fridge for up to 3 days.
Tips
- * If using frozen spinach instead, use 1/2 cup thawed. Remove any access moisture by squeezing spinach with paper towel before adding to the crock pot.

Sounds amazing! 2 questions..... what kind of rice and is it cooked before adding? And is the spinach fresh or frozen or ? Thanks for sharing!! ;D
Is this cooked in the crockpot on high or low for the 4 hrs?
