Cheesy Shepherds Pie

I can’t believe it took me all of my 27 years to try shepherds pie! It’s like a combination tater tot hot dish and KFC’s famous bowl, two of my favorite things. It’s got all of the best ingredients to make it a delicious comfort food. Ground hamburger, veggies, mashed potatoes, and most importantly, cheese. Do not skip out on the cheese! It’s what takes this shepherds pie above and beyond. It is a dish that will be sure to warm you up, especially for the way this winter has been in Minnesota! Double the recipe to feed a crowd or cut the recipe in half if you’re a household of only one or two.

Ingredients
For the beef mixture:
  • 1/2 lb ground beef
  • 1/4 cup diced onion 
  • Salt & pepper to taste
  • 2 cloves garlic
  • 1/2 tsp Italian seasoning
  • 1 Tbsp tomato paste 
  • 1/2 cup beef broth
  • 1/4 cup dry red wine
  • 1 Tbsp Worcestershire sauce
  • 1 cup mixed veggies
For the potatoes:
  • 2 large russet potatoes
  • 1/4 cup butter
  • 1/2 cup milk
  • Salt & pepper to taste
  • 1/2 cup shredded cheddar cheese 
Instructions
For the beef mixture:
Brown the hamburger with onions in a skillet over medium heat.
Season with salt & pepper.
Add in garlic cloves, tomato paste, beef broth, wine, and Worcestershire sauce.
Then add in veggies and mix together.
Let simmer for a few minutes.
Place the beef mixture in the bottom of a greased casserole dish.
For the potatoes:
Wash, peel and chop potatoes.
Place in a saucepan with water and boil under fork tender.
Once fork tender, strain the potatoes.
Place in a bowl with butter, milk, and salt.
Mash and then mix together until smooth.
Top the beef mixture with mashed potatoes and cheese.
Bake at 375° for 25-30 minutes or until cheese is golden brown.
