Sweet Potato Shepherd's Pie

This is a healthier twist on the classic heavy meal. It doesn't taste like it but this meal has 7 different vegetables. My one and a half year old could not get enough of this! My husband loved it too so it is safe to say this meal is good for the whole family. The sweet potatoes and savory meat/vegetable mixture create a perfect balance. Feel free to double the recipe and put some in the freezer for the future.


Sweet potatoes are a great source of vitamin A and fiber.

Ingredients
Sweet Potato Shepherd's Pie
  • 4-6 small/medium sweet potatoes
  • 2 lbs ground beef or lamb
  • 2 large carrots, diced
  • 1/2 cup butternut squash, diced
  • 2 celery stalks, diced
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 2 tbsp garlic
  • 1 tbsp rosemary
  • 6 oz tomato paste
  • 2 tbsp chili powder
  • 1 tbsp butter
Instructions
Sweet Potato Shepherd's Pie
Preheat oven to 375
bake the sweet potatoes until fork tender, about 45-60 minutes
Meanwhile, in a medium skillet, saute ground beef/lamb until browned. Add onions, garlic, tomato paste, rosemary, bell pepper, chili powder, celery, carrots, and butternut squash
Saute mixture until well combined and vegetables are softened, about 5-7 minutes
Once sweet potatoes are done, let cool and then peel skin off them
Place peeled sweet potatoes into medium mixing bowl and use hand mixer or a masher to mash potatoes. Mix in butter and continue to mash until there are no lumps
Pour meat/vegetable mixture into a 9x9 baking pan and top with mashed sweet potatoes
Bake for 10 minutes
