Does this cold weather have you craving comfort food? This week has been in the -20 and -30 degree wind chills here in Iowa and hot food is on the menu before we have to venture out in the cold.


Whether you’re looking for a hot and filling breakfast for a cold day, a hearty weekend breakfast recipe or a delicious option to take a a weekend brunch, this easy breakfast casserole is a tasty option that all ages can enjoy. It’s also perfect for breakfast for dinner on busy weeknights.

Easy Tater Tot Breakfast Casserole With Sausage


To make this casserole recipe, you’ll need ground sausage, eggs, half and half, garlic powder, salt and pepper, shredded cheddar cheese and tater tots.

To get started, you’ll want to preheat your oven to 350℉. Using a skillet, you’ll want to brown the ground sausage. Cook over medium heat until browned and break into small pieces. Once fully cooked, remove the skillet with the sausage from the heat, drain the grease and set it aside until you’re ready to add it.


You’ll also want to get out a 9′ x 13′ baking dish for your tater tot breakfast casserole with sausage and prep it by coating it with cooking oil spray. Once the pan is ready, take the sausage and sprinkle it across the bottom of your casserole dish in an even layer.

Using a medium sized mixing bowl, whisk together your eggs, the garlic powder, salt and pepper and the half and half.

Make sure that everything is well mixed and then pour this mixture over the sausage that you placed in the baking dish. Top it generously with the shredded cheese.

After adding the cheese, you’ll want to add a layer of frozen tater tors on top of the mixture. Be sure not to submerge your tater tots and just to carefully add them to the top.



Bake this tater tot breakfast casserole with sausage for 50 minutes or until a knife inserted in the middle comes out clean. Let the casserole sit to cool for 5 minutes before you serve.

  • 1 lb ground sausage
  • Cooking Spray
  • 8 large eggs
  • 3/4 cup half and half
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 cup cheddar cheese, shredded
  • 1 lb frozen tater tots
Instructions

Preheat your oven to 350 ℉ and allow it to heat while you prep the casserole.Cook the ground sausage over medium heat. Brown it thoroughly while you break it into small pieces.
Remove the sausage from the heat, and drain any grease. Set it aside while you make the rest of the dish.Spray a 9' x 13' casserole dish generously with cooking oil spray.Next, sprinkle the crumbled sausage evenly over the bottom of the dish.In a mixing bow, you'll want to whisk the eggs, and add the half and half, garlic powder, salt and pepper. Mix everything until it is well combined.
Then, pour the mixture over the top of the sausage that you placed in the casserole pan. Top with shredded cheese.Add a layer of frozen tater tots to the top of the baking pan. Make sure the layer is even, however do not submerge the tater tots. Bake the dish for approx. 50 minutes or until you can insert a knife in the middle and have it come out clean. Then remove your casserole from your oven. Let it cool for 5 minutes before serving to your family or guests.

      I cannot have calcium & use store-brand reg. coffee creamer. I will try this, making

      individual servings for the family, using hash brown patties cooked & drained in t he bottom . Instead of sausage, I will use bacon or bacon bits or diced ham. For variety, use different cheeses.

      I also use the non-milk coffee creamer in other recipes, like potato soup and chicken 'n' dumplings. ph
