Starting to go a liiiiiiittttlllleee bit crazy in quarantine.

But who isn’t? I’m just lucky I’ve got the two cutest pups ever getting me out of the house for walks.

I have been using this time in quarantine to try new things (I’ve been getting into yoga), but am also trying my best to follow the stay home orders.


So, it’s been a fun challenge to figure out a way to get weeks worth of meals out of one trip to the grocery store.


That’s what brings me to one of the greatest of all cuts of meat…


The Pork Butt (or Shoulder).


This big hunk of meat is super cheap and always available at the store because a lot of people are intimidated by it.


But not us!


Nope, we thrive off cheap meat. Because know how to handle meat, don’t we Tricksters?


Anyway…below it one of the easiest recipes I’ve got and it makes a boatload of servings.


Vic Trick: FREEZE HALF!!! This is sooo good even after being frozen for up to 3 months.


And even better, it’s a slow cooker recipe, so it does all the work for you.


Take your pork and rub it all over with garlic powder, onion powder, chili powder, cumin, and oregano. Place it into the slow cooker, side with the most fat facing up.


Next, pour the chicken broth all around the outside edge of the pork and add the minced garlic and lemon juice. Then take a 7 oz can of chipotle peppers, pour in the juice, and crush them in your hands as you add them into the crock pot.


This will make them very spicy! Use less chipotle for less spice.

And now it’s time to let the slow cooker do its damn thang. Cook on Low for 8-10 hours for the most delicious pullable pork you can ever taste.

Now this right here is delicious as is. But….


To make these TRUE carnitas, they need to crisp up in the oven.


Spread the pork onto a baking sheet lined with parchment. Add about a cup of the juice from the slow cooker all around the pork, then place under the broiler for about 5 minutes until the edges get nice and crisp.


BOOM! You’re done.


Grab a scoop and throw it over rice (or cauliflower rice) and make a burrito bowl. Or put it in a tortilla and make a burrito. Or in lettuce wraps!

Ingredients

  • 4 lb skinless pork butt or shoulder
  • 4 tsp salt
  • 2 tsp pepper
  • 1 tbsp dried oregano
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp cumin
  • 7 oz can chipotle peppers in Adobo
  • 1/2 cup chicken broth
  • 8 cloves minced garlic
  • 2 tbsp lemon juice

    I have used Boston Butts (pork) for many years doing this very thing except I don't use all the spices. Salt, pepper, and a spray occasionally with a mixture of vinegar salt water.. In oven 5-6 hrs. and shred. Add bottled (Sugar Rays Original) barbecue sauce or your own home made sauce. Serve on hamburger buns or anyway you like. Delicious and what we did years ago before crockpots were invented.

      yum!!! that sounds like a classic pulled pork and DELICIOUS! this is more of a pork carnitas recipe which is why I included all those spices.
