Breaded Pork Chops With Tarragon Mustard Sauce

Recently I visited a winery that sold wine & herb infused grainy mustard. It sounded so delicious and I knew I had to have the Riesling and tarragon infused one.
Of course you can do many things with this or just use it on sandwiches or as a meet dip... but I wanted to get creative!
This delicious recipe was so simple, yet tasted like a restaurant quality meal.
Don't worry! Regular grainy mustard will work just fine as well!
The flavor is not overpowering as it pairs with the delicious pork and panko breading. Pair this dish with some green beans or vegetable of choice for a full meal.

Breaded Pork Chops With Tarragon Mustard Sauce

Ingredients
For the pork chop
- 2 pork chops
- a bowl or plate full of panko bread crumbs
- a container grainy mustard
- 2 tsp dried parsley
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp salt
- 2 tsp dried oregano
- 2 tsp pepper
For the sauce
- 4-6 tbsp of grainy mustard
- 1 tbsp fresh parsley
- 1 tbsp fresh tarragon
- 1 thinly sliced shallot
- 2-3 tbsp cream
- 1-2 tbsp chicken stock
- salt to taste
- pepper to taste
Instructions
- Heat olive oil in a pan on low
- While heating, pat the pork chops dry with paper towel and season with all of the seasonings
- Coat the seasoned pork chop with the grainy mustard using a brush
- Dip the coated pork chops into the panko crumbs. It will stick right to the pork due to the mustard coating.
- Place in the pan and cover for approximately 5 minutes.
- Flip the pork chops and cover for approximately 3-5 more minutes until cooked through.
- Take off the heat and let rest before cutting.
- While resting, mix all of you sauce ingredients into a bowl. Adjust according to preferred taste and consistency.
