Not sure what to make for supper tonight? Looking for a little twist on a basic recipe? Whether you are looking for a simple dinner or a delicious meal prep, these mini meatloaves are going to be one of your new favorite recipes. The plus side is, you probably already have most (if not all) the ingredients on hand already. My fiancé does not typically like meatloaf but he does love these, so I would definitely say they are picky eater approved! I would suggest serving with a side of veggies and some potatoes for a tasty, well balanced meal.

For the sauce
  • 1/4 cup ketchup
  • 1 Tbsp mustard
  • 1 Tbsp brown sugar
For the meatloaf
  • 1 lb ground beef
  • 1 egg
  • 1/4 cup diced onions 
  • 1/3 cup breadcrumbs 
  • 1 Tbsp Worcestershire sauce 
  • 1 tsp garlic powder
  • 1/2 tsp Italian seaosning
  • Salt & pepper to taste
For the meatloaf
Preheat oven to 400°.
Mix together all ingredients for the meatloaf until well combined. 
Form into five mini meatloaves. 
Place on a baking sheet.
Brush each meatloaf with sauce.
Bake for 30 minutes or until no longer pink.
Top with extra sauce if desired.
For the sauce
In a small bowl, mix together ketchup, mustard and brown sugar and set aside.
