Quick, healthy, tasty breakfasts are hard to come by, but you will find all 3 with this simple recipe.

This recipe combines fruit, grains, and dairy to give you a filling breakfast that is also delicious and healthy.

This parfait is simple enough to make fresh daily or you can food prep enough for the week to grab and go.

Parfaits are typically made using granola, but for this recipe, I have replaced the granola with quinoa for a healthier option with less sugar.

You can make your granola using this recipe, or store-bought works well but tends to have more sugar.

If you are meal prepping, mason jars work well to store this recipe in the fridge for the week.

For Cinnamon Apples

Peel and chop 1 large apple.

In a medium-sized saucepan over medium heat, add the chopped apple along with 1/4 t nutmeg, 1/4 t cinnamon, and 1 T of water. Cook for 5-10 minutes until the apples are soft.

Once the apples are soft, remove them from the heat and transfer them to a bowl.

How to make a basic bowl of plain quinoa

Rinse the quinoa in a strainer. Boil 1 part quinoa with 2 parts water and then simmer for 15 minutes. Let stand for 5 minutes.

If you like quinoa, you can also make extra and have it on hand for lunch and dinner.

Quinoa is a great grain to have on hand to use in place of rice, mix with veggies or have as a simple side.

In the same saucepan you used to cook the apples add 1/2 c cooked quinoa and mix with 1/4 t nutmeg, 1/4 t cinnamon, 1/2 t maple syrup, and mix until combined.

Layer your ingredients in a serving ramekin, mason jar, or glass to create the perfect parfait.

Start with quinoa on the bottom, and add a large spoon of yogurt on the top. Greek Yogurt is a healthy option, but if you prefer a flavored non-greek yogurt, that also works. Next, add a spoon of cooked cinnamon apples.

Repeat your layers until your serving dish is filled.

Serve immediately or cover and refrigerate for up to 5 days.

If you are making enough for 5 days, double or triple this recipe.

  • 1 chopped, peeled apple
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon cinnamon
  • 1 Tablespoon water
  • 1/2 t Maple Syrup
  • 1/2 C cooked quinoa
  • 1/2 c Greek Yogurt

In a medium saucepan boil 1 c water with 1/2 c quinoa.
Simmer for 15 minutes. Let stand for 5 minutes.
Once apples have cooked in a saucepan add 1/2 c quinoa with 1/4 t nutmeg, 1/4 t cinnamon, and 1/2 t maple syrup. Mix until combined.
Prepare Parfait
Layer quinoa, yogurt, and apples to the top in a serving glass, ramekin, or mason jar.
