Poha or Chura Matar is an Indian dish. Each region in India have their own recipe.
Best poha I ever ate was at a friend’s house in Varanasi. I loved it so much that she would ask her cook to make it for me every time I visited her home. Best thing about this recipe was how balanced the lemon flavour was.
Before I left Benaras I asked her cook for the recipe and she gladly explained it to me. I modified it a bit according to the taste of my family keeping the real essence intact. Since then it has become our family favourite.
Along with peas, I also add other vegetables and roasted peanuts. It makes it even more savoury. Do try this recipe and let me know what you think about it?

Recipe details
Ingredients
- 1 Cup Poha.
- 1/4 cup chopped onions
- 1/4 cup chopped tomatoes
- 1/4 cup peas
- 1/2 cup chopped vegetables ( carrots, bell pepper, green beans)
- 1 tbs lemon juice
- 1 tsp garam masala powder
- 1/4 tsp turmeric powder
- salt to taste
- 2 tbs oil
- 1 tsp mustard seeds
- 1 tbs ghee
- 1/4 cup roasted peanuts.
- 2-3 tbs bikaneri bhujiya
Instructions
- Wash poha. Drain water and set aside.
- Heat oil in a pan. Add mustard seeds.
- Add onion, add salt. Cook till they turn pink.
- Add peas and vegetables.
- Cover it and let it cook on low to medium flame. Stir occasionally.
- Once onions and vegetables are done, add finely chopped tomatoes, turmeric, garam masala.
- Cover it and let tomatoes cook.
- Once masala is ready, add lemon juice and mix.
- Add soaked Poha and mix everything.
- Add ghee.
- Add more salt or lemon juice if needed.
- Let it cook for a few minutes till everything blends evenly.
- Your poha is ready.
- Add roasted peanuts and , bikaneri bhujiya. Enjoy 🙌
Tips
- Do not soak chura. Just wash it, drain water and set aside.
- 📍Do not add too much onion or tomato. For 4 people I use roughly 1/3 cup chopped onions and 1/3 cup chopped tomatoes.
- 📍Make sure onions and tomatoes are cooked properly.
- 📍You can also add curry leaves, green chillies or red chilli powder. I usually don’t make it hot 🥵
