Cilantro Lime Rice

These two ingredients will completely change your plain white rice, transforming it into a delicious side dish. This pairs well with Mexican dishes or can be used as a topping on taco night. I also like to make this rice when cooking Carribean style dinners as it pairs well with jerk seasoning. I recently made this rice with jerk fish and topped it all off with mango salsa. You can substitute brown rice for white if preferred, but I would not recommend substituting lime for lemon.

Ingredients

  • 1 cup uncooked white rice
  • 2 cups water
  • 1/2 tsp salt
  • 2 limes
  • handful of cilantro (roughly 1/4 - 1/2 cup)
Instructions

Rinse your rice well with water
Cook the rice per labelled instructions using a rice cooker or stove top (ratio should be 1:2 rice to water and be sure to salt the water slightly!)
Once the rice is cooked, fluff it using a fork
Squeeze the juice from 2 limes directly into the rice
Finely chop the cilantro and add it to the rice
Fluff the rice again and enjoy!
