Rice is such an easy dish, but can be so bland and boring! Finding ways to change things up and add flavor to our rice dishes is something I strive for. This cilantro lime rice is the perfect addition to your weeknight taco night! Have the neighbors over, they'll love helping you devour this delicious rice and beg for more!

My daughter absolutely loves rice so I try to change it up from time to time. I found this recipe for Cilantro Lime Rice from Curry Trail. It was super delicious and very easy to make. I would highly recommend reading her post about tips for cooking with rice. I honestly can say, I had no idea about half of what I read!

Ingredients

  • 1 c long grain rice, basmati rice
  • 2 c chicken stock or vegetable stock
  • 2 tsp olive oil
  • pinch of salt
  • 1 tbs butter
  • 3 tbs lime juice, freshly squeezed
  • 1 zest of 1 lime
  • 1 c cilantro leaves finely chopped
Instructions

Rinse the rice before cooking it – this helps remove excess surface starch and keeps the rice from sticking together. Rinse in a fine mesh strainer
Sauté – Heat up a little oil in a pot and sauté the rinsed rice on medium heat until the rice begins to brown.
Add chicken stock to the pot. Bring to a boil and then reduce to a simmer on medium heat, with the lid off of the pot. When the liquid has evaporated by 90%, turn off the heat and cover with the lid and let the rice absorb the flavors.
Allow cooked rice to sit for 10 minutes before uncovering and stirring.
Add butter, lime juice, cilantro, lime zest and gently toss with fork. Add salt to taste.
Tips
  • Rice Cooking Tips Best rice to use – White long grain rice works best for this recipe. Long grain rice has less starch making it less sticky when cooked.
  • Rinse the rice – I learned from Currytrail that you should always rinse your rice before you cook it as this helps remove any excess surface starch and keeps it from sticking when cooked. To rinse rice, place rice in a metal mesh colander and run under water. At first the water will be a white cloudy color…rinse until clear water run through the colander.
  • Sauté the rice – Another tip I learned from Currytrail is that you should lightly sauté the rice before actually cooking it with water or chicken stock (my favorite for extra flavor!) Heat a small amount of olive oil in a pan, toss in the rinsed rice and sauté until the rice is slightly browned. Remove from pan and cook as you normally would. Sautéing the rice beforehand, helps the rice to cook evenly and remain separated and not all stuck together.
