The perfect side dish does exist!


I swear I make this rice dish a few times a month as it has easily become a favourite in my household! My toddler always asks for the “green rice” - he’s a cilantro lover just like his mom!


This dish is perfect for grilled chicken, curry dishes or served alongside stir fry. It’s quick and flavourful and uses basic ingredients you just might have on hand!


I like to use jasmine rice in this recipe but I’m sure you could sub in what you have - you may need to adjust the liquid ratio however 😊 Enjoy!

Ingredients


  • 1 1/2 cups rice, uncooked
  • 1 3/4 - 2 cups chicken broth
  • Juice of 2 limes
  • 1/4 cup finely diced cilantro
  • 1/4 tsp salt and pepper

Instructions


In a small pot, combine rice and broth and stir. Cook over medium high heat.
Once simmering, cover with a lid and turn temperature to low. Cook for about 10-15 minutes, as per the instructions on the rice package.
Once cooked and soft, fluff with a fork and stir in lime juice, cilantro and spices.
Serve hot and enjoy!

Tips

  • To make vegan/vegetarian friendly, sub in vegetable broth instead.
