How to Make Chipotle Cilantro Lime White Rice
This is a Chipotle Copycat Cilantro Lime White Rice. Cilantro is obviously one of my favorite herbs to garnish with. To make Chipotle’s Cilantro Lime Rice, you will need Basmati or a long grain rice, cilantro, limes, and salt.
Anyone that knows me knows I am absolutely obsessed with Chipotle. I lived in NYC, the melting pot of the United States and the finest culinary city probably in the world. That did not stop me from craving Chipotle once a week when I lived there. My Mexican friends told me it was a sin how much I liked it since it is such an Americanized Mexican restaurant. I don’t care: I love burritos, I love Chipotle, not to mention the DELICIOUS white rice.

If using pressure cooker:
First things first: read your rice instructions and go with the amount of water you are supposed to use according to your rice! Every different type of rice absorbs differently so this is very important.
In a pressure cooker, add the rice, water and salt. Pressure cook on low for 12 minutes or hit the rice button. Let the pot naturally release for best quality, or you can quick release.
Stir the rice and add the lime zest, lime juice, and cilantro. Salt to taste.
If using stovetop:
First things first: read your rice instructions and go with the amount of water you are supposed to use according to your rice! Every different type of rice absorbs differently so this is very important.
Cook 1 cup of rice according to package instructions. Bring 1-2 cups of water (look at the rice label) to a boil and then pour in the rice. Stir and lower heat to medium low and cook covered for 15 minutes, until all the water has evaporated. Stir in cilantro, lime zest and lime juice. Enjoy!
