Today, I am sharing How to Make the Best Cilantro Lime Rice Recipe. Come on, I’ll show you.
I love a good recipe that has few ingredients, is simple to make, that is the perfect side dish to add to your dinner table. It’s not always easy to put a hot, homemade dinner on a busy weekday evening. This copycat recipe is so versatile-you can put it in a burrito or rice bowl. It’s perfect for a side dish with Asian dishes, Mexican dishes and any American food.
How to Make the Best Cilantro Lime Rice Recipe
This recipe only takes a few ingredients-White or brown rice-which ever you prefer. I have used Mahatma Jasmine or Basmati rice-both are delicious. I use canned coconut milk-I like it better than the coconut milk in the carton for cooking with. Fresh limes and cilantro make the best seasoned recipe. I also add a bit of honey and salt and pepper to taste.
Can I use dried Cilantro in Cilantro Lime Rice?
Absolutely! This is so good with fresh or dried cilantro. If you don’t like lime in your cilantro rice, it is just as good without lime.
I start by finely chopping my cilantro with a sharp knife. Then I quarter the limes. I like to cut the limes on a plastic or marble cutting board.
Can I cook cilantro lime rice in a rice cooker?
Yes. Whether you are cooking your rice on the stovetop in a saucepan or in a rice cooker, I add my rice, coconut milk, then any water to cover the rice by a half of an inch. The coconut milk will make a creamy rice. You are going to love it.
What goes with Cilantro Lime Rice?
Cilantro lime rice with black beans is a match made in heaven. Grill some chicken and your dinner is complete. This is one of those recipes that your kids will love. This recipe is gluten free and dairy free, so it is perfect for those who have food sensitivities.

Cilantro Lime Rice
Serving Size:6 servingsTime:30 minutesDifficulty:Easy
Ingredients
- 2 c. Jasmine or Basmati Rice
- I 13.5 oz. can of Coconut Milk
- Water
- Juice of one Lime
- 1 bunch Fresh Cilantro, finely chopped
- 1 T. Honey, optional
- Salt and Pepper to Taste
Directions
- In a medium saucepan on medium high heat. Add rice and coconut milk. Add enough water to cover the rice about a half inch.
- Heat to boil, then cover and reduce heat to a simmer until liquid is absorbed and rice is tender.
- Remove from heat. Add cilantro, lime, honey, salt and pepper.
- Enjoy!
