Tuna Ceviche Stuffed Fried Avocado

Being a bartender for 8 years, you’re around A LOT of food. The restaurants I worked in were mainly mid class restaurants, but the creativity I saw in the kitchen was under-appreciated. The thing I love most about cooking is taking recipes and mixing them up a bit. Normally tuna ceviche has avocado in it, but I figured lets fry that sucker and put the ceviche on top. That’s how Val and I got our Tuna Ceviche Stuffed Fried Avocado.


This recipe is delicious, but I love it with the sauce we created. The sauce adds that little extra kick that you want and doesn’t overpower the ceviche. Honestly the way we came up with it was by using what we had in the fridge and thinking about what would pair well with the ceviche. Val went to workout and was going to see if she could find a sauce while she was out. Instead, I decided to try and see what I could make. A couple renditions later, we have our “secret sauce”.


To me the Tuna Ceviche Stuffed Fried Avocado is the perfect spring/summertime meal. It’s light and healthy (even though its fried). The main thing I like to think about when I say something is healthy is, if there’s 1 unhealthy thing about it, you’re probably ok. Example, fried chicken wings. You’ve got the fried wing (bad thing) and then you’ve got the sauce on it which is mainly butter and hot sauce (bad thing). So that would fall in my not healthy category. It’s not a perfect system, but it works for me and I recently got a clean bill of health from my doctor so I’m sticking with it.

Tuna Ceviche Stuffed Fried Avocado

Ingredients
Secret Sauce
  • 3 tbsp sour cream
  • 2 tbsp lime juice
  • 1 tbsp cilantro chopped
  • 1 tbsp chipotle peppers in adobo sauce peppers chopped, but get a lot of the adobo sauce
Tuna Ceviche
  • 1 lb fresh tuna cut up into inch cubes
  • ½ red onion diced
  • 5-6 fresh limes juiced
  • ½ cup cilantro chopped
  • 1 tsp salt
  • 1 tsp black pepper
Fried Avocado
  • 2 whole avocados cut in half and skin peeled
  • 1 cup panko bread crumbs
  • a lot vegetable oil fill til an inch or two high in dutch oven or deep pan
  • 2 eggs scrambled
Instructions
Secret Sauce
You guessed it, just put all the ingredients together and mix it up
Tuna Ceviche
Cut up tuna and mix all ingredients into bowl
Cover with saran wrap and put in fridge
Every 10 minutes remove from fridge and stir contents together
Fried Avocado
Heat oil to about 200°
Dip halved avocado in egg and then move to panko bowl
Toss bread crumbs on top of avocado until completely covered
Using a slotted spoon or wire skimmer slowly drop avocado into oil
If avocado isn't fully submerged, use long handled spoon to toss oil on the top of avocado until all of its brown and crispy
Remove avocado from oil and let sit on paper towel to get excess oil off
When cooled down, remove ceviche from fridge and add on top and enjoy with our sauce
