A rich delicious dinner in just 15 minutes!


This salmon recipe will become your favorite weeknight dinner. A flavorful crust on the salmon but soft and flaky in the inside. Then basted in the tangy lemon butter sauce and nice subtle kick from fresh jalapeno.


typically i have made seared salmon, blackened salmon or with honey ginger glaze. This time I wanted to elevate the the flavors and have my own twist on the traditional piccata sauce.


Here is what you need:

  • 3 - 4 pieces of Atlantic Salmon (Wild or farm raised)
  • Handful of spinach
  • cherry tomatoes
  • parsley
  • jalapeno
  • butter
  • lemon juice


Simply season the salmon with salt, pepper, garlic powder and lightly dust with flour and set aside. Then cook in a hot cast iron pan. First add olive oil, then seared the salmon for 4 minutes on one side. then turn over and add the spinach, tomatoes, jalapenos, butter and lemon juice and cook for 5 minutes. Baste with the sauce and dinner is served!

Easy dinner to enjoy over pasta, rice or favorite mix greens salad.

Just simple one pan dinners with lots of flavor.

Ingredients

  • 3 - 4 pieces of wild salmon or Atlantic farmed raised
  • 1 cup of chopped spinach
  • 1/2 cup of diced cherry tomatoes
  • 1 TBSP of chopped fresh jalapenos (no seeds)
  • 2 TBSP of butter
  • 2 TBSP of lemon juice
  • 2 TBSP of extra virgin olive oil
  • 2 TBSP of flour
  • Seasonings:
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 1/2 tsp of garlic powder
Instructions

Tips
