Ingredients:


  • 3 – 8 oz salmon fillets with skin
  • 2 tbsp extra-virgin olive oil
  • 1 lemon
  • 2 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:


Coat a skillet with olive oil.



Place salmon fillets skin-side down in the skillet.

Squeeze the lemon over top of the salmon.

Season evenly with Italian herbs, salt, and pepper.



Cover the skillet and cook on medium heat until the salmon is pink and flaky, about 15 minutes.

Garnish with fresh parsley.

    At what temperature do you cook the salmon at?

      When I cook salmon, I definitely preheat the skillet with the olive oil in it, until it was glistening/shimmering but NOT smoking. When I add the fish, skin side down, I drop the heat to medium - my fave way is to squeeze lemon on top, but then I top with a mixture of sauteed onion/bacon bits (Hormel real ones are my go-to-), garlic, and panko breadcrumbs.


      No, it's NOT this recipe (this recipe ROCKS, by the way!!!), but I find if I start with a pretty hot skillet, the skin gets really crispy; I don't personally eat the skin, but then when I am eating the fish, it pulls away from the skin with almost no resistance. Enjoy - this recipe is awesome!!! Try it over rice, or pasta tossed with a little olive oil, garlic, and crushed red pepper flakes, maybe a little fresh ground pepper (like a pasta al aglio e olio!). YUM!!! ~Chrissie (PS I don't know if you have an Aldi near you, but this recipe works really well with their frozen -thawed- salmon, starting with the high cooking temperature. The fish stays pretty firm, not mushy!!!)
