I’m a dipper, are you? I love dipping food in anything from salsas to dressings. If you are looking for an easy and delicious dressing, your search ends here. This also happens to be a very quick and easy dressing to make and doesn’t require any cooking. It’s only a matter of throwing everything into a mason jar and letting your immersion blender do all the work. You can use it on salads or even as a dipping sauce and in pasta dishes. I think this dressing is a perfect addition to adding lots of fresh flavor to your meals. This also happens to be high in protein too because of the yogurt that’s included and has a cheesy flavor from the nutritional yeast.


WHAT IS NUTRITIONAL YEAST:


Nutritional yeast a.k.a “nooch” is the inactivated version of the yeast you’d use to make breads. It has a cheesy umami flavor and has many health benefits like lowering cholesterol, boosting your immune system, and many more. It’s commonly used in many vegan recipes.


This recipe reminds me of the El Torrito pepita dressing without all the extra ingredients. It’s full of flavor, its creamy texture is wonderful and the nuttiness you get from the pumpkin seeds takes it up to a completely new level, in a good way. The lime juice and zest gives it a fresh tangy flavor. You can thin it out as much as you want by adding a little water.

Ingredients
For the dressing
  • 1/2 to 1 cup Greek yogurt or your fav plain yogurt
  • 1/2 bunch cilantro or more
  • 1 green onion, chopped
  • 1 chopped jalapeño with seeds or without
  • Garlic to taste
  • Zest of 1 lime
  • Juice of 1 lime or 2
  • 1/4 cup pumpkin seeds
  • 2 tbsp nutritional yeast 
  • salt & pepper to taste
  • 1/4 tsp ground cumin
  • 1/4 cup avo oil 
  • Water to thin out, if needed
Instructions
For the dressing
Add all ingredients into a mason jar.
Using an immersion blender, blend all ingredients thoroughly.
Add a tablespoon of water at a time to achieve the consistency you prefer.
Store in glass container in refrigerator.
Modify any ingredient to your liking.

Tips
  • If you prefer a spicier Dressing leave the seeds in the jalapeño.
