What could be better than guacamole you can make yourself in under 5 minutes that rivals any that you could get at your friendly neighborhood fast casual Mexican joint?


I’ve loved avocados since the first time I ever tried an avocado. I know that there are people out there that don’t like avocados, and I just don’t understand that.


My husband is one of those people, and I just have to shake my head at him. He’s also one of those people who think cilantro tastes like soap. It makes eating Mexican food with him a bit of a chore, since those are two of my favorite foods/flavors on the planet.


And although he doesn’t like avocados themselves, he does like guacamole, so he’s always on board with me making this.

Healthy Vegan Friendly Guacamole

Ingredients
Healthy Vegan Friendly Guacamole
  • 5 small or 4 large avocados
  • 1/4 cup red onion, diced small
  • 2-3 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 3 tablespoons chopped fresh chives 
  • salt and pepper
Instructions
To Make Healthy Vegan Friendly Guacamole
Dice your onion, and place it in a small bowl of cold water for 10 minutes.
Scoop the flesh out of your avocados, and place it in a medium bowl.  
Squeeze the lemon juice and lime juice into the bowl with the avocados.
Mash with a fork or potato masher, until the guacamole reaches your desired consistency. 
Stir in the onions and chives, and season with to taste with salt and pepper.
Tips
  • Storing Guacamole: avocados famously start to oxidize and go brown the second they are exposed to air, and guacamole is no exception to that. The lime and lemon juice in the mix help keep it from going brown, but I like to place the guac in a glass container and press a sheet of plastic wrap on top of the dip, and then place an air-tight lid over it. The guacamole will stay good for 2-3 days in the fridge.
  • Guacamole is best served with chips in my opinion, but crackers or raw veggies are some other great options. You can also eat it with a spoon, which I may or may not have done.

    Just curious as to how you would make guacamolo non vegan. Also, in Mexico we put chopped tomato in our guacamole and NOT chives. No one would ever do that. Guacala!

    • To make Guacamole non vegan, add mayonnaise. Have seen several recipes that call for a bit of mayo or yogurt, which would nix the "vegan.". Personally have never met an avocado I didn't like. This recipe is one of many variations on the same theme. Actually intrigued by the addition of chives instead of cilantro.

    It's also really good on wheat toast with crumbled feta cheese, but I don't know if that's vegan.
