Cold Mango Sago Dessert

This year, the hot weather came in very quickly and we were all looking for ways to cool down. Luckily it coincided with mango season and our family loves mango! I decided to make a large batch of this cold mango dessert and have it ready in the fridge when we needed something to cool us down.


This dessert is not too sweet and bursting with tons of mango flavor. My kids would eat bowls after bowls if I didn’t stop them. The key to keep the texture of the tapioca is to store the the mango mixture and the tapioca separately. Don’t combine the two until you’re ready to eat otherwise the tapioca will soak up all the liquid and that makes them go soggy. If you must make this ahead of time, I would not combine the two for more than a hour prior to ensure that the tapioca pearls do not absorb too much of the liquid and swell. Ingredients

  • 1/2 cup uncooked small tapioca
  • 3 large ripe mangos, peeled and flesh removed
  • 1/2 can coconut milk
  • 1/4 cup sweetened condensed milk
  • Additional diced mango for topping
Instructions

Fill a small saucepan with water and bring to a boil.
Once boiling, add in the tapioca pearls and reduce heat to medium. Give it a stir and boil for 15-20 minutes until the tapioca is nearly cooked through except for a small white dot in the center.
Turn off the heat, remove from the heat and cover the pan with a lid. Allow the tapioca to soak for 10 minutes. After 10 minutes, drain through a sieve and run under cold water.
Allow to drain for 10 minutes and then transfer the tapioca to a bowl and refrigerate until ready to serve.
In a large blender, add in the mango flesh, coconut milk and condensed milk. Blend until smooth. Taste and adjust for sweetness as needed by adding more sweetened condensed milk if needed.
Transfer the mango mixture to a container and refrigerate until cold.
When you are ready to serve, combine the mango mixture with the tapioca. Scoop into cups and serve cold with additional diced mango on top if desired.
