Nectarine, Mozzarella, Cherry Tomato Salad With Balsamic Drizzle

This salad is just summer on a platter! It is the perfect light dinner for a warm evening, or a special al fresco lunch. I love how the sweet nectarines pair with earth olive oil and creamy mozzarella. Make sure the nectarines are ripe and soft to get the most out of their flavour. I also like to serve this when I am entertaining along side some other salads, grilled meats or bread. It is great for entraining since all the ingredients can be cut and prepared a couple hours earlier, and popped in the fridge.


You can buy really delicious sticky balsamic drizzles in the supermarket for an extra oomph, but equally, just make a quick one like I did below.

Ingredients
The Salad:
  • 2 Nectarines 
  • 200g (about 20) Cherry Tomatoes 
  • 1 mozzarella Ball
  • Handful Basil Leaves
  • 1 TBSP Olive Oil
  • Salt Flakes
Balsamic Drizzle:
  • ½ TBSP good quality balsamic Vinegar
  • 1 TSP Honey
Instructions

 First, cut all the ingredients for the salad. Halve the nectarines, remove the stone careful and cut into wedges. Halve the cherry tomatoes and cut on tear the mozzarella ball into small pieces. Tear the basil leaves into smaller pieces.
In a bowl carefully mix together all the salad ingredients with the olive oil, salt flakes and half the basil leaves. 
Transfer to a serving plate or individual bowls, and top with the remaining basil leaves. 
 For the balsamic drizzle, simply mix together the balsamic and honey well and then drizzle over the salad.
