The best every summer salad - with a little revamp this year. The beauty in this recipe is the simplicity, and the key to the most delicious flavours is to use the best and flavourful ingredients. Lovely ripe nectarines, a soft and falling apart mozzarella, fresh fragrant basil, some good quality olive oil and balsamic vinegar. Minimal time in the kitchen = maximum reward... I could eat this all summer long!


Serve to your friends al fresco, pop together for a quick lunch, a light dinner during the longer evenings. Have some fresh bread around to mop around in the juices at the end.

Ingredients

  • 4 Nectarines 
  • 200g (about 20) Cherry Tomatoes 
  • 1 or 2 mozzarella Balls - try and find buffalo or burrata
  • Handful Basil Leaves
  • 1 TBSP Olive Oil
  • 1/2 TBSP Balsamic Vinegar
  • Salt Flakes
Instructions

First, cut all the ingredients for the salad. Halve the nectarines, remove the stone careful and cut into wedges. Halve the cherry tomatoes and cut on tear the mozzarella ball into small pieces. Tear the basil leaves into smaller pieces.
In a bowl carefully mix together all the salad ingredients with half the basil leaves. 
Transfer to a serving plate or individual bowls, and top with the remaining basil leaves and the salt flakes.
 For the balsamic dressing, simply mix together the balsamic and olive oil and then drizzle over the salad.
