Crunchy Asian Salad
Summer is here, which means salad season is upon us. I am always looking for new ways to create healthy salads in the summer.
If you are looking for a delicious salad twist, you need to try this Crunchy Asian Salad! It is a yummy and easy alternative to a traditional salad.
Broccoli slaw, toasted sliced almonds, fresh cucumbers, and toasted crunchy ramen noodles come together to create a flavorful and healthy salad.
The toasted almonds and ramen noodles give this salad a delightful crunch!
The dressing combines soy sauce, olive oil, sesame oil and sugar to provide a sweet but savory flavor.
Top with your favorite protein. Chicken breast, shrimp or lean streak would all make wonderful additions!

Ingredients
Salad
- 1, 16oz bag of broccoli slaw mix
- 1 medium cucumber, peeled and sliced
- 1 package of ramen noodles, seasoning removed; noodles crumbled
- 1/3 cup sliced almonds
Dressing
- 1/4 cup olive oil
- 2 tbsp sesame seed oil
- 3 tbsp sugar
- 3 tbsp. Low sodium soy sauce
Instructions
Salad
- Turn oven on to broil
- Place almonds and crumbled ramen on a baking sheet and spray with cooking spray.
- Place in oven and let cook for 2 minutes, toss and let cook for another 2-3 minutes or until browned.
- Toss broccoli slaw mix and sliced cucumbers in a bowl. Top with ramen noodles and almonds.
Dressing
- Whisk all dressing ingredients together in a small bowl. Pour over salad, toss and serve!
Tips
- Add dressing, almonds and ramen at time of serving to prevent ingredients from getting soggy.
