Are you a fan of peanut butter with chocolate? I want to share with you a quick and easy peanut butter blossom cookies! It's amazingly soft and chewy with a crackly sugary crust, perfect for any occasion! Whether you're planning a bake sale or wanted to give some holiday treats, this peanut butter blossom cookie is definitely perfect!


It is so easy, just roll the dough, bake them, press them and eat them! And my most favorite part is adding the chocolate kisses as I get to eat some as well. LOL. Just make sure you have enough for the cookies! Don't take my word for it, give this a try and let me know how you like it!

Ingredients
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup salted butter, softened
  • 1/2 cup creamy peanut butter
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 40 chocolate kisses
Instructions
Mix all the sugars, softened butter and creamy peanut butter in a large mixing bowl. Beat it until it's fluffy in texture.
Add the egg and vanilla extract and beat it until it's well incorporated. Add in the flour and baking soda and beat it until there's no flour streaks remain. Cover it plastic wrap and chill for 30mins in the fridge.
Preheat oven to 375F. Line a baking sheet with parchment paper. Grab an extra cup of sugar to roll the dough and set aside.
Scoop approximately 1 to 1.5 tsp of size and shape it into balls using your hands. Roll into the granulated sugar and place into baking sheet.
Bake for about 10mins or until golden brown and crackly on top. Press a chocolate kiss in the middle right away once it's out of the oven and let it cool completely. Enjoy!

    Good, but this is even quicker. 1 cup peanut butter, 1 cup sugar, and 1 large egg. That's it.
